Harvesting: thinning the grapes when they soften, manual harvest
Vinification: Fermentation with maceration for 5 days, soft pressing
Maturation: maturation in an oak barrel for 12 months
Bottling: no cleaning and filtration, 2500 bottles
Alcohol: 14,0 % vol
Total Sulphites: 77 mg / l
Serving temperature: from 12 to 14°C
Wine features: The wine is clean, intensive gold yellow in colour with orange shade. We can smell overripe and dried fruits( figs, raisins ). The taste is dry, fresh, very mineral, full body, with a long aftertaste.We can feel a mildly tanic, nice and intensive botritis.
Combining with food: It goes well with fat and spicy fish, lamb,veal, matured cheese.
Ageing potential: It will achieve s best after 5 years.
