Grape variety: Cabernet Sauvignon 65 % and Merlot 35 %
Vineyard location: terraces, south
Soil structure: marl, sandstone
Harvesting: Thinning the grapes when they start to colour, manual harvest.
Vinification: Fermentation with maceration for 14 days, soft pressing and pouring into oak barrels - barrique.
Maturation: In oak barrels for 24 months, combining the varieties before bottling.
Bottling: No filtration, maturation in bottles for 12 months, 2000 bottles.
Alcohol: 13,0 % vol
Sulphites: 51 mg / l
Serving temperature: from 18 to 20°C
Wine features: The wine is scarlet red colour and thick. The smell is very intensive, fine and rich. We can sense the smell of overripe and dried red fruit, especially berries. Besides, you can sense spices too ( juniper ). It tastes dry, warm and soft, fresh, fruity, rather tannic and tasty, balanced, intensive, pretty elegant and durable, harmonic, strong and appropriate.
Combining with food: It goes well with venison, red meat (roasted, barbecued), dried meat, aged and spicy cheese.
Ageing potential: At the beginning the wine is good, but in years it will gain the harmony and drinkability. It will achieve its best after 8 years.
