Grape variety: Chardonnay 40 %, Pinela 30 % and Rebula 30 %
Vineyard location: terraces, south
Soil structure: marl, sandstone
Harvesting: thinning the grapes when they soften, manual harvest
Vinification: Fermentation of Chardonnay and Pinela in a stainless steel tank at controlled temperature until two thirds of sugar are fermented, then pouring it in an oak barrel, adding Rebula with grape skins, the following fermentation with maceration taking place at natural temperature.
Maturation: Maturation in an oak barrel for 24 months with mixing – stirring the lees (batonnage), then pouring into a stainless steel tank and maturation for 6 months.
Bottling: No cleaning and filtration, maturation in bottles for 6 months, 2000 bottles.
Alcohol: 14,5 % vol
Total Sulphites: 103 mg / l
Serving temperature: from 12 to 14°C
Wine features: The wine is gold yellow in colour. We can smell ripe yellow fruit. The taste is nicely warm, dry, fresh and mineral with a long aftertaste, The wine is harmonic, intense, full and ripe.
Combining with food: It goes well with smoked fish, veal, lamb, Fuzi with truffles, matured cheese.
Ageing potential: The wine is ripe and good to drink, but in years it will gain the harmony and drinkability. It will achieve its best after 7 years.
